Salami Roll! Sounded better than a Pepperoni Roll :)

I've made Pepperoni Rolls before... but a Salami Roll sounded much better the other night! So I just substituted... and it was awesome!! So yummy, served with a side of homemade pasta sauce :)

Yummy Chocolate Trifles in Martini Glasses!

My husband's birthday was January 2nd! He requests this dessert often, and to make it special I decided to do individual servings in martini glasses and spice up the presentation a bit! They were SO adorable, and this is one of the easiest desserts to make.  EVER!  A must-try!!

(BTW I use homemade whipped cream!)




Awesomely Delicious S'Mores Bites!

These were absolutely fantastic!! I've never met anyone who DIDN'T like s'mores, and now you can make them for the masses with this recipe! It makes 24 s'mores bites, which was just enough for our football party!

I got a kitchen torch for Christmas (YAY!) so I torched the marshmallows before drizzling them with chocolate, and would "warm them up" when I wanted to have another one later, but even without it, they're to die for! Try it out!

Peppermint Candy Cane Cupcakes - YUM!

These are so adorable! And just in time for Christmas! I wish I had some red food coloring gel left, the swirls would have turned out better, but they were cute and equally delicious! Topped with crushed candy canes!


Chocolate Eggnog Cupcakes!

Chocolate cupcakes, stuffed with eggnog filling, and topped with a gorgeous blue tinted eggnog buttercream... Oh these are DELICIOUS!!! Fantastic taste, presentation, and the little snowflake sprinkles I found at TOPS are a beautiful finish on these!!

Plus I got to use the cupcake pan my best friend got me - It bakes the cupcakes with stoppers so they bake with the holes for filling them later!! FANTASTIC!!
  



Oh, and I had some Eggnog Buttercream left over, so I sandwiched them between some of the Snickerdoodles I made... Awesome! :)

Red Velvet Cake Balls for Christmas!

Any baker is inspired by Bakerella, and her cake balls are so cute and absolutely DELICIOUS! My first try at these was about a month ago, I made her Red Velvet Cake Balls to add to my Christmas Treat Baskets. They were a little tricky, but I got better at it and they are so adorable!!

Happy Birthday to our Daycare Teacher!

I love love LOVE our daycare teacher, so when her birthday came I had to spoil her! It's even funnier when she said, "What did your Mommy make me?" and her husband ran across the house and downstairs mumbling something about cupcakes. :) She likes vanilla with vanilla, so that's what she got! Happy Birthday Danielle!

Cookies and Cream - My favorite!!!

Anytime I get ice cream (which isn't often...) I get Cookies and Cream! I grew up getting Oreo Blizzards at Dairy Queen, and I love cookies and cream anything! So why not a cupcake?  By far the most addictive treat I've ever made in my life!  Very, very good!! Now that I'm writing this down, I have to make them again!!

I Make-A You Dessert! Cannoli Cupcakes!

I'm not a HUGE fan of cannoli's, but my Italian husband is! I made these out of curiosity and to challenge myself one day (pure boredom, maybe).... and I guess they turned out great!  My husband took them to work, and everyone had said they were the best cupcakes I had made so far!  Yay!! Success, love it. :)


The Best Ham and Potato Soup. Ever.

I give all the merit to Allrecipes.  This was a fantastic soup recipe I found years ago on Allrecipes and I wouldn't change a thing - everything about this soup is absolutely perfect!!

One of my best-looking, HEAVIEST cupcakes! You gotta work out to lift one of these things!! The weight mainly comes from the fact that it's a brownie-like cupcake, topped with something that I can really describe as a chocolate mousse, and then homemade whipped topping.  mMmMmMm these were fannnntastic!! I also dipped them in chocolate sprinkles and made pumpkin fondant decorations for Halloween cupcakes!! :)






My Daughter's 2nd Birthday Butterfly Cake!

My daughter Chloe is so laid back, go with the flow... she just floats around like a butterfly and takes everything that comes at her in stride! She learns early! I still have that to learn.... So I made her a butterfly cake for her 2nd birthday!




That's a LOT of stuff in ONE cupcake! That's how I roll :)

Chocolate, Macadamia Nuts, White Chocolate Chunks, Caramel = ONE AWESOME CUPCAKE :)

My friend had a craving for a cupcake with ALL this stuff packed into it, so I made it happen!  :)  Chocolate cupcake stuffed with white chocolate chunks and macadamia nuts, topped with a caramel buttercream and caramel drizzle... They were quite yummy, and pretty, too!! Would have been lookin REAL good with a darker cupcake liner, but that's the only con to these babies! Delicious, and it satisfied her craving!

Red Velvet, Where Have You Been All My Life??

Okay, so when I told my best friend I had never eaten red velvet anything, EVER.... she nearly had a heart attack.  So after heavily researching what the "best red velvet" recipe was online, I decided to make a recipe from the How To Eat A Cupcake Blog.  You can find the recipe here!  Though I decided on a cream cheese frosting rather than a cinnamon buttercream, so I used this recipe that I found:


Cream Cheese Frosting
16 oz. cream cheese (2 packages), softened
1/2 cup unsalted butter (one stick), softened
1 teaspoon vanilla extract
2 1/2 cups powdered sugar, sifted
pinch of salt


With an electric mixer, blend together cream cheese and butter until smooth.  Turn mixer to low speed and blend in powdered sugar, salt and vanilla extract.  Turn mixer on high and beat until light and fluffy. Use immediately or refrigerate, covered, until ready to use.  If refrigerated, the frosting will need to be brought to room temperature before using (after frosting softens up, beat with mixer until smooth).
Recipe Notes: If you prefer a sweeter and/or stiffer frosting, more powdered sugar can be added (up to four cups). But remember, the more sugar you add, the less you’ll be able to taste the tangy cream cheese!

Let me tell you, absolutely TO DIE FOR! These were FANTASTIC! I loved the cupcake liners I got for our girls getaway that I made these for. :) Deliciousness!

Margarita, Please! Baked, not shaken!

Okay, I like alcoholic flavored treats.  Who doesn't?  Okay, maybe not everyone, but I do!  When the idea of a margarita cupcake popped into my head, there was no way I could pass the opportunity up!

FANTASTIC!!! I've made them twice now, and they are absolutely delicious!  Perfect balance of sweet and the tangy flavor of a margarita - I must make these again soon!!




Eggnog, Chocolate, and Peppermint... Oh My!

I have lots of fun cooking, baking, and surprising myself in the process! I thought I should document my adventures so here we go!

I asked a friend what kind of cupcakes he wanted for his birthday, and it took him about three weeks, but he finally decided on his cupcake of choice about 3 days before his birthday.  Eggnog, chocolate, and peppermint cupcakes.  Ohhh dear, this is going to be fun!

So I decided on an eggnog based vanilla cupcake, with chocolate ganache topping and peppermint buttercream frosting.  I'm not a fan of eggnog and peppermint, so I took everyone's word for it that these were delicious!! :) Happy Birthday Tyler!
